Mexican Zucchini Casserole
1 Tbsp. Canola Oil
1/8 tsp. salt
1/8 tsp. pepper
1 c. shredded zucchini
1 Tbsp. chopped seeded jalapeno pepper
1 Tbsp. finely chopped onion
1/3 c. biscuit/baking mix
2 Tbsp. shredded cheddar cheese
1. In a small bowl, beat the egg, oil, salt, and pepper. Add the zucchini, jalapeno, and onion; stir to coat. Stir in biscuit mix and cheese.
2. Pour into a 15-oz. baking dish coated with cooking spray. Bake at 375 degrees for 18-20 minutes, or until a toothpick comes out clean. Let stand for 10 minutes before serving.
We loved this casserole, and have actually made it twice in the last two weeks! For the faint of heart, it's really not spicy at all. The jalapeno gives it just the right amount of Mexican flavor!
Crab Cakes with Lime Sauce

2 cans (6 ounces each) crabmeat, drained, flaked, and cartilage removed
1 green onion, chopped
1 Tbsp. Dijon mustard
1 tsp. Italian salad dressing mix
1 1/2 c. crushed butter-flavored crackers (about 37), divided
2 Tbsp. lime juice, divided
1/4 c. canola oil
1/4 c. sour cream
1 1/2 tsp. grated lime peel
1. Combine the crab, onion, mustard, dressing mix, 1 c. cracker crumbs, 1/2 c. mayonnaise, and 1 Tbsp. lime juice. Shape into 6 patties, coat with remaining cracker crumbs.
2. In a large skillet, heat oil over medium heat. Cook the crab cakes 3-4 minutes on each side or until they are lightly browned.
3. For lime sauce, in a small bowl, combine the sour cream, lime peel, and remaining mayo and lime juice until blended. Serve with crab cakes.My husband and I loved the crab cakes we had on our honeymoon trip to Destin, Florida. I was so excited to find this recipe because A) it's cheap and newlywed-budget friendly and B) It actually tasted really good! It definitely took us back to our honeymoon! :-D
